In Moroccan Arabic, one of the many regional varieties of Arabic spoken in North Africa, “shlada” means salad, while “b’zitoune” refers to the olives that form the heart of this dish.

Ingredients
- 200 grams mixed pitted olives (black and green)
- 4 fresh tomatoes, diced
- 1 cucumber, diced
- 1 red onion, finely chopped
- Juice of 2 lemons
- 2 large cloves of garlic, finely chopped
- 1 teaspoon cumin
- 1 tablespoon paprika powder
- 1 bunch of flat-leaf parsley, finely chopped
- Extra virgin Yakelos olive oil
Preparation
Step 1: Prepare the Dressing
Combine the juice of two lemons with at least six tablespoons of extra virgin Yakelos olive oil to create a fresh and zesty dressing.
