Even in the dark winter months, this dressing brings the sun into your salad. The extra virgin olive oil does not make the dressing greasy, but conjures up a deeper taste sensation.
Endless variations
The original Italian recipe wants you to use blueberries, but of course any other berry will do. This allows you to immediately vary this dressing from sour to sweet. The dressing can therefore reflect your mood.

For example, if you choose strawberries, you create a deliciously sweet taste sensation for your dressing. If you use raspberries, your dressing will be a little less sweet. With blueberries, blueberries or red currants, your dressing will have a slightly sour taste.

Ingredients:
- One cup (250 ml) berries of your choice (finely mashed)
- Five tablespoons extra virgin olive oil
- One tablespoon mustard
- Juice of half a lemon
- One teaspoon pine nuts (finely chopped)
- One sprig rosemary (finely chopped)
- Pepper and sea salt to taste.

Directions:
Mix all the ingredients well with a whisk and pour the dressing over your salad. We think this dressing goes perfectly with your green salad. That can be the 'normal' butterhead lettuce, but also rocket or even a salad of beetroot or radish greens.
