A Refreshing Cucumber Salad by Jamie Oliver – Ready in No Time
This salad gets an extra kick from spicy red onion and fragrant dill.
Ingredients:

1 cucumber

½ red onion

White wine vinegar
-
Dill
-
Salt
-
Extra virgin olive oil
Preparation:

Use a fork to score deep grooves along the length of the cucumber, then slice it diagonally into pieces about 1 cm thick. Place in a bowl.

Coarsely grate half a peeled red onion using the large holes of a box grater.

Drizzle generously with white wine vinegar.

Pick the leaves from a small bunch of dill, finely chop them, and sprinkle over the salad.

Mix everything well.

Add salt to taste, if needed.

Let the cucumber salad sit in the fridge for about 30 minutes to marinate and chill slightly.

Just before serving, drizzle generously with extra virgin olive oil to enhance the flavors.
